On natural stone, would this product help seal the stone to prevent water splash / spray from carring calcium or hardwater onto other surfaces? We have used this product on parts of our horitzonal exterior concrete (e.g., 20 space covered car parking, etc.) and like its performance there.
I would say it depends on how porous the rock is. If it can penetrate, it should help!

For chemical resistance, we recommend the Siloxa-Tek 8510. This is a penetrating sealer that holds up under the harshest conditions.

I see this would work in a commercial dog kennel. Would it chat the top of the concrete making a smooth finish preventing damage to the dog’s paw pads that can occur from rough concrete?
Penetrating sealers don't change the texture of the concrete, so if it is a rough finish, it will still be a rough finish.

It will work on the grout, but how it works on the stone depends on the porosity.

Is this product appropriate for sealing new concrete in a dog kennel environment? Is it non-toxic and will it prevent concrete staining, and odor retention? If so, how much is needed for a 1000 sq. ft. area?
This is good for a dog kennel. As a penetrating sealer, it does not leave a film on the surface so there is no film to reduce traction, and nothing for a dog to lick off.
It will prevent odors and stains from getting in to the concrete.
It covers about 150 sqft per gallon.
Another option is the Ghostshield Siloxa-Tek 8505 which covers about 250 sqft per gallon.
